The short answer
Cool it fast, refrigerate within two hours, reheat once only, and get it piping hot all the way through. Rice is the one that catches people out.
- Cool leftovers quickly, in a shallow container, and get them in the fridge within two hours of cooking.
- Eat within two days, or freeze.
- Reheat once only, and until steaming hot throughout rather than warm.
- Stir halfway through in a microwave, which heats unevenly and leaves cold spots.
What will ruin it
Cooked rice is the risky one. Bacillus cereus spores survive cooking and multiply in rice left at room temperature, producing a toxin that reheating does not destroy. Cool rice within an hour, refrigerate it, and never reheat it more than once.
Why it works
The danger zone for bacterial growth is roughly 8C to 63C. Everything in safe reheating is about moving food through that range quickly in both directions.
